As the label says, this is a really rich and indulgent mature cheddar that is equally at home alongside a slice of banana cake or crumbled on top of a salad. By using figs, we chose to amplify the flavours of the cheddar, rather than adding a more acidic fruit note, whilst the honey adds a perfumed sweetness that makes this cheese sometimes feel like it would be more at home in a Lebanese restaurant. The bottom line is that it tastes fantastic and so different from the norm.
